Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup packed brown sugar
  • 4 pineapple slices
  • 4 maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a Bundt pan with non-stick spray or butter.

  2. In a small bowl, combine the melted butter and brown sugar. Pour the mixture evenly into the bottom of the Bundt pan.

  3. Arrange the pineapple slices on top of the sugar mixture and place a maraschino cherry in the center of each pineapple slice.

  4. In a medium bowl, whisk together the flour, baking powder, and salt.

  5. In a separate large bowl, whisk together the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.

  6. Pour the cake batter over the pineapple slices in the Bundt pan, spreading it evenly.

  7. Bake for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

  8. Remove the cake from the oven and let it cool in the pan for 5 minutes. Then, carefully invert the pan onto a serving plate to release the cake.

  9. Serve the pineapple upside-down Bundt cake warm or at room temperature. Enjoy!
