Ingredients

  • 1/4 cup unsalted butter
  • 1/2 cup packed brown sugar
  • 1 can pineapple rings (reserve the juice)
  • Maraschino cherries, for garnish
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup pineapple juice (reserved from the can)
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a 10-inch cast iron skillet, melt the butter over medium heat. Stir in the brown sugar until it melts and forms a caramel. Remove from heat.

  3. Arrange the pineapple rings on top of the caramel in the skillet. Place a maraschino cherry in the center of each pineapple ring.

  4. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

  5. In a separate bowl, combine the pineapple juice, vegetable oil, vanilla extract, and egg. Mix well.

  6. Pour the wet ingredients into the dry ingredients and stir until just combined.

  7. Carefully pour the batter over the pineapple and caramel in the skillet, spreading it evenly.

  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  9. Remove the skillet from the oven and let it cool for 5 minutes. Then, place a serving plate upside down on top of the skillet and carefully flip the cake onto the plate.

  10. Serve warm and enjoy!
