Ingredients

  • 1 cup of all-purpose flour
  • 1 tsp of baking powder
  • 1/4 tsp of salt
  • 1/2 cup of unsalted butter, melted
  • 1/2 cup of granulated sugar
  • 2 eggs
  • 1 tsp of vanilla extract
  • 1/2 cup of pineapple juice
  • 1 cup of sliced tropical fruits (such as pineapple, mango, and kiwi)
  • 1/4 cup of brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, and salt.

  3. In a separate large bowl, cream together the melted butter and granulated sugar until well combined.

  4. Beat in the eggs one at a time, then stir in the vanilla extract.

  5. Gradually add the dry ingredients to the wet ingredients, alternating with pineapple juice, mixing until just combined.

  6. In the greased cake pan, sprinkle the brown sugar evenly on the bottom.

  7. Arrange the sliced tropical fruits on top of the brown sugar.

  8. Pour the cake batter over the fruit and smooth the top with a spatula.

  9. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  10. Allow the cake to cool for 10 minutes, then invert it onto a serving plate.

  11. Serve the tropical upside-down cake warm or at room temperature.
