How To Make Red Cabbage Slaw with Griddled Chicken

Ingredients
- 1 small red cabbage, thinly sliced
- 2 carrots, grated
- 1 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and black pepper to taste
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Instructions

In a large bowl, combine the red cabbage, carrots, red onion, and cilantro. Set aside.

In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and black pepper. Pour the dressing over the cabbage mixture and toss well to combine. Refrigerate for at least 30 minutes to allow the flavors to meld.

Preheat a griddle over medium-high heat.

In a separate bowl, mix together the olive oil, paprika, garlic powder, dried thyme, salt, and black pepper. Coat the chicken breasts evenly with this mixture.

Place the seasoned chicken breasts on the preheated griddle and cook for about 6 minutes per side, or until cooked through and charred.

Remove the chicken from the griddle and let it rest for a few minutes. Then, slice the chicken into thin strips.
