- 2 cups grated carrots
- 1/2 cup unsweetened applesauce
- 1/4 cup honey
- 1/4 cup olive oil
- 2 eggs
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- 1/2 cup oats
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped walnuts (optional)
- 1/4 cup raisins (optional)
Instructions

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a large mixing bowl, combine the grated carrots, applesauce, honey, olive oil, eggs, and vanilla extract. Mix well.

In a separate bowl, whisk together the whole wheat flour, oats, baking soda, cinnamon, nutmeg, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.
