- 1 cup grated carrots
- 1/4 cup unsweetened applesauce
- 1/4 cup honey
- 1/4 cup olive oil
- 2 eggs
- 1 tsp vanilla extract
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup chopped walnuts (optional)
Instructions

Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

In a large bowl, combine the grated carrots, applesauce, honey, olive oil, eggs, and vanilla extract. Mix well.

In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the chopped walnuts, if using.

Pour the batter into the prepared cake pan and smooth the top.
