  • 1/2 cup rolled oats
  • 1/2 cup boiling water
  • 1/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a small bowl, combine rolled oats and boiling water. Let it sit for 5 minutes.

  3. In a separate large mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.

  4. Beat in the egg until well combined.

  5. In another bowl, whisk together flour, baking soda, cinnamon, and salt.

  6. Gradually add the dry ingredients to the butter mixture, alternating with the oatmeal mixture. Stir in vanilla extract.

  7. Pour the batter into the greased cake pan. Sprinkle chopped walnuts on top if desired.

  8. Bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.

  9. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
