Ingredients

  • 150g unsalted butter, softened
  • 150g caster sugar
  • 3 large eggs
  • 150g self-raising flour
  • 1 tsp mixed spice
  • 100g mixed dried fruit (raisins, currants, peel, etc.)
  • 50g glace cherries, halved
  • 2 tbsp apricot jam
  • 200g marzipan
  • Icing sugar, for dusting

Instructions

  1. Preheat your oven to 180°C (350°F) and line a 9-inch square baking tin with parchment paper.

  2. In a large mixing bowl, cream together the softened butter and caster sugar until light and fluffy.

  3. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next.

  4. Sift in the self-raising flour and mixed spice. Gently fold the dry ingredients into the batter until just combined.

  5. Stir in the mixed dried fruit and halved glace cherries.

  6. Pour the batter into the prepared baking tin and level the top with a spatula.

  7. Bake in the preheated oven for 40-45 minutes, or until a skewer inserted into the center comes out clean.

  8. Once baked, remove the traybake from the oven and allow it to cool completely in the tin.

  9. Once cooled, remove the traybake from the tin and place it onto a serving plate.

  10. Warm the apricot jam in a small saucepan over low heat, then brush it over the top of the traybake.

  11. Roll out the marzipan to fit the size of the traybake and carefully place it on top, sealing the jam in between.

  12. Using a fork, gently score a crisscross pattern into the marzipan.

  13. Dust the traybake with icing sugar, then slice and serve.
