  • 1 zucchini, sliced
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large baking tray, arrange the chicken thighs, bell peppers, red onion, zucchini, and cherry tomatoes.

  3. Drizzle with olive oil and sprinkle with dried oregano, garlic powder, salt, and pepper.

  4. Toss everything together to coat evenly.
