How To Make Simple Simnel Cake Recipe

Ingredients
- 200g self-raising flour
- 100g unsalted butter, softened
- 100g caster sugar
- 2 large eggs
- 200g mixed dried fruit
- 50g glace cherries, halved
- 50g currants
- Zest of 1 lemon
- 1 tsp mixed spice
- 150g marzipan, cut into small cubes
- Apricot jam, for glazing
Instructions

Preheat the oven to 150°C/300°F and grease a 6-inch cake tin with butter.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the eggs, one at a time, until well combined.

Fold in the flour, mixed dried fruit, glace cherries, currants, lemon zest, and mixed spice.

Pour half of the cake mixture into the prepared tin and spread it evenly.

Arrange the marzipan cubes on top of the cake mixture, leaving a small border around the edges.

Add the remaining cake mixture on top, smoothing it out.

Bake in the preheated oven for 1 hour 30 minutes, or until a skewer inserted into the center comes out clean.

Once baked, remove from the oven and leave to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Once cooled, brush the top of the cake with a thin layer of apricot jam for glazing.

Serve the Simnel cake sliced and enjoy!
