How To Make Roasted Root Veg Traybake

Ingredients
- 4 medium carrots, peeled and chopped into chunks
- 4 medium parsnips, peeled and chopped into chunks
- 2 large sweet potatoes, peeled and chopped into chunks
- 1 red onion, sliced
- 4 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

In a large roasting tray, combine the chopped carrots, parsnips, sweet potatoes, red onion, and minced garlic.

Drizzle the olive oil over the vegetables and toss to coat evenly.

Sprinkle the dried rosemary, dried thyme, salt, and pepper over the vegetables and toss again to combine.

Place the tray in the preheated oven and roast for 45 minutes or until the vegetables are tender and slightly caramelized, stirring occasionally.

Remove from the oven and serve the roasted root veg traybake as a delicious side dish or main course.
