Ingredients

  • 1 cup self-raising flour
  • 1/2 cup sugar
  • 1/2 tsp mixed spice
  • 1/2 cup butter, melted
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup mixed dried fruit
  • 1/4 cup chopped almonds
  • 4 oz marzipan

Instructions

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.

  2. In a large bowl, mix together the flour, sugar, and mixed spice.

  3. In a separate bowl, whisk together the melted butter, eggs, and milk.

  4. Pour the wet ingredients into the dry ingredients and mix until just combined.

  5. Fold in the dried fruit and chopped almonds.

  6. Divide the muffin batter evenly among the muffin cups.

  7. Roll the marzipan into 4 small balls and place one on top of each muffin.

  8. Bake for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  9. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
