Ingredients

  • 4 cups cherry tomatoes, halved
  • 4 cups sourdough bread, torn into bite-sized pieces
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh basil leaves, torn
  • Grated Parmesan cheese, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large mixing bowl, combine the cherry tomatoes, sourdough bread, olive oil, minced garlic, dried oregano, salt, and black pepper. Toss until well coated.

  3. Spread the mixture evenly on a baking tray.

  4. Bake for 20-25 minutes, or until the tomatoes have burst and the bread is crispy and golden brown.

  5. Remove from the oven and let cool for a few minutes.

  6. Sprinkle torn basil leaves over the traybake and serve with a generous amount of grated Parmesan cheese.
