Ingredients

  • 4 chicken thighs
  • 1 pound baby potatoes, halved
  • 1 cup asparagus, trimmed
  • 1 cup cherry tomatoes
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the chicken thighs, baby potatoes, asparagus, cherry tomatoes, red onion, garlic, olive oil, dried thyme, dried rosemary, salt, and pepper until well coated.

  3. Arrange the chicken and vegetables in a single layer on a baking tray.

  4. Bake for 35-40 minutes, or until the chicken is cooked through and the vegetables are tender.

  5. Garnish with fresh parsley before serving.
