Ingredients

  • 200g chestnuts, cooked and peeled
  • 100g dark chocolate
  • 100g unsalted butter, softened
  • 100g sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 50g all-purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • Chestnuts, grated (for garnish)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line a round cake pan with parchment paper.

  2. In a microwave-safe bowl, melt the dark chocolate in short intervals, stirring in between. Set aside to cool slightly.

  3. In a food processor, blend the cooked chestnuts until smooth. Add the softened butter and sugar, and blend until creamy.

  4. Add the eggs one at a time, blending well after each addition. Stir in the vanilla extract.

  5. In a separate bowl, combine the flour, baking powder, and salt. Gradually add to the chestnut mixture and mix until well combined.

  6. Gently fold in the melted chocolate until evenly incorporated.

  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

  10. Once cooled, dust the top of the cake with grated chestnuts for garnish.

  11. Slice and serve.
