Ingredients

  • 4 egg whites
  • 1 cup of granulated sugar
  • 1 tsp of vanilla extract
  • 1/4 cup of cocoa powder
  • 1 cup of heavy cream
  • 2 tbsp of powdered sugar
  • 1/2 cup of chestnut puree
  • 1/4 cup of roasted chestnuts, chopped

Instructions

  1. Preheat the oven to 275°F (135°C). Line a baking sheet with parchment paper.

  2. In a clean mixing bowl, beat the egg whites with an electric mixer until soft peaks form. Gradually add the granulated sugar and continue beating until stiff and glossy.

  3. Sift in the cocoa powder and gently fold it into the meringue until well combined.

  4. Spoon the meringue onto the prepared baking sheet, forming a circle about 8 inches in diameter. Smooth the top with a spatula.

  5. Bake in the preheated oven for 1 hour and 30 minutes, or until the meringue is crisp and dry. Let it cool completely on the baking sheet.

  6. In another mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.

  7. Gently fold the chestnut puree into the whipped cream until well blended.

  8. Place the cooled meringue on a serving plate. Spread the chestnut cream mixture over the top of the meringue.

  9. Sprinkle the chopped roasted chestnuts over the cream.

  10. Serve immediately and enjoy!
