  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/3 cup powdered sugar
  • Pinch of salt
  • 2 eggs
  • 1 cup granulated sugar
  • 3 tbsp all-purpose flour
  • 1/4 cup lemon juice
  • 1 tbsp lemon zest
  • Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, butter, powdered sugar, and salt. Mix until crumbly.
  3. Press the mixture into an 8-inch square baking dish lined with parchment paper. Bake for 20 minutes or until golden brown.
  4. In a separate mixing bowl, whisk together eggs, granulated sugar, flour, lemon juice, and lemon zest.
  5. Pour the mixture over the baked crust and bake for an additional 15 minutes.
  6. Cool the bars in the pan and dust with powdered sugar. Cut into squares before serving.
