Ingredients

  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 4 large tortillas
  • 1 cup shredded cheddar cheese
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Salsa, sour cream, and avocado for serving

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper.

  2. Heat a large skillet over medium heat and add a drizzle of oil.

  3. Sauté the bell pepper and onion until soft and golden, about 5 minutes.

  4. Add the diced tomatoes and cook for an additional 2 minutes.

  5. Push the veggies to one side of the skillet and pour in the beaten eggs.

  6. Gently scramble the eggs until cooked through.

  7. Warm the tortillas in a separate skillet or in the microwave.

  8. Divide the scrambled eggs, vegetable mixture, and shredded cheese among the tortillas.

  9. Sprinkle with cilantro and roll up tightly.

  10. Serve with salsa, sour cream, and avocado.
