  • 4 egg whites
  • 1 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp ground ginger
  • 1/4 tsp vanilla extract
  • 1 cup prunes
  • 1/2 cup strong brewed coffee
  • Whipped cream and grated chocolate for serving

Instructions

  1. Preheat the oven to 200°F (95°C) and line a baking sheet with parchment paper.

  2. In a clean mixing bowl, beat the egg whites until stiff peaks form.

  3. Gradually add the sugar, cinnamon, nutmeg, cloves, ginger, and vanilla extract to the beaten egg whites.

  4. Spoon the meringue mixture onto the prepared baking sheet, forming small nests or desired shapes.

  5. Bake the meringues in the preheated oven for 2 hours, or until they are dry and crisp.

  6. While the meringues are baking, place the prunes in a small bowl and pour the brewed coffee over them. Let them soak for at least 1 hour.

  7. Once the meringues are done, remove them from the oven and let them cool completely.

  8. Drain the coffee-soaked prunes and chop them into small pieces.

  9. Fill the meringue nests with the chopped prunes.

  10. Serve the spiced meringues with a dollop of whipped cream and a sprinkle of grated chocolate.
