How To Make Braised Pork with Prunes

Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup prunes
  • 1 cup chicken broth
  • 1/4 cup balsamic vinegar
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a large Dutch oven or pot over medium-high heat.

  2. Season the pork with salt and pepper, then add it to the pot and brown it on all sides. Remove the pork from the pot and set aside.

  3. In the same pot, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.

  4. Add the prunes, chicken broth, balsamic vinegar, soy sauce, brown sugar, dried rosemary, and dried thyme to the pot. Stir to combine.

  5. Return the pork to the pot and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 2 hours, until the pork is tender.

  6. Serve the braised pork with prunes over rice or mashed potatoes. Enjoy!
