Ingredients

  • 4 pork chops
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 onion, sliced
  • 1 cup prunes
  • 1 cup chicken broth
  • 1 cup crème fraîche
  • 1 tbsp Dijon mustard
  • Chopped parsley, for garnish

Instructions

  1. Season the pork chops with salt and black pepper.

  2. Heat olive oil in a skillet over medium-high heat. Add the pork chops and cook for 4-5 minutes per side, or until cooked through. Remove from the skillet and set aside.

  3. In the same skillet, add the sliced onion and cook until softened, about 3-4 minutes.

  4. Add the prunes and chicken broth to the skillet. Bring to a simmer and cook for 5 minutes, until the prunes are softened and the liquid has reduced slightly.

  5. Stir in the crème fraîche and Dijon mustard until well combined. Cook for 2 minutes more.

  6. Return the pork chops to the skillet and cook for another 2-3 minutes, until heated through.

  7. Serve the pan-fried pork chops with the sauce from the skillet. Garnish with chopped parsley.
