Ingredients

  • 2 cups couscous
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 can chickpeas, rinsed and drained
  • 1 can diced tomatoes
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon cumin
  • 1 tablespoon paprika
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Place the couscous in a large bowl and cover with boiling water. Let it sit for about 10 minutes until the couscous absorbs the water.

  2. Meanwhile, heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until translucent.

  3. Add the carrots, zucchini, bell pepper, and spices to the pot. Cook for about 5 minutes, stirring occasionally.

  4. Add the chickpeas and diced tomatoes to the pot. Bring to a simmer and let cook for about 10 minutes.

  5. Fluff the couscous with a fork and add it to the pot. Stir well to combine with the vegetables and sauce. Cook for an additional 5-10 minutes until heated through.

  6. Serve the Algerian couscous hot, garnished with fresh cilantro.
