Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 green bell pepper, diced
  • 1 celery stalk, diced
  • 1 cup diced chicken sausage
  • 1 cup diced cooked chicken
  • 1 cup diced cooked shrimp
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups cooked rice
  • Chopped fresh parsley, for garnish

Instructions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the onion, garlic, green bell pepper, and celery, and cook until softened, about 5 minutes.

  2. Add the diced chicken sausage, cooked chicken, and cooked shrimp to the pot. Cook for an additional 3 minutes.

  3. Stir in the diced tomatoes, chicken broth, Cajun seasoning, paprika, dried thyme, dried oregano, bay leaf, salt, and pepper. Bring the mixture to a simmer and let it cook for 20 minutes.

  4. Remove the bay leaf and stir in the cooked rice. Cook for an additional 5 minutes to heat through.

  5. Serve the jambalaya hot, garnished with chopped fresh parsley.
