How To Make Quick and Easy Jambalaya Recipe

Ingredients
- 1 tbsp vegetable oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 green bell pepper, diced
- 1 celery stalk, diced
- 1 cup diced chicken sausage
- 1 cup diced cooked chicken
- 1 cup diced cooked shrimp
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 tsp Cajun seasoning
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 cups cooked rice
- Chopped fresh parsley, for garnish
Instructions

Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the onion, garlic, green bell pepper, and celery, and cook until softened, about 5 minutes.

Add the diced chicken sausage, cooked chicken, and cooked shrimp to the pot. Cook for an additional 3 minutes.

Stir in the diced tomatoes, chicken broth, Cajun seasoning, paprika, dried thyme, dried oregano, bay leaf, salt, and pepper. Bring the mixture to a simmer and let it cook for 20 minutes.

Remove the bay leaf and stir in the cooked rice. Cook for an additional 5 minutes to heat through.

Serve the jambalaya hot, garnished with chopped fresh parsley.
