How To Make Easy Cajun Jambalaya Recipe

Ingredients

  • 1 lb chicken breast, diced
  • 1 lb smoked sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Chopped parsley, for garnish

Instructions

  1. In a large pot or Dutch oven, heat some oil over medium-high heat.

  2. Add the chicken and sausage, and cook until browned. Remove and set aside.

  3. In the same pot, add the onion, bell pepper, garlic, and celery. Cook until they soften.

  4. Stir in the diced tomatoes, rice, chicken broth, Cajun seasoning, thyme, oregano, paprika, and cayenne pepper. Season with salt and pepper.

  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and liquid is absorbed.

  6. Add the cooked chicken, sausage, and shrimp to the pot. Stir well and cook for an additional 5 minutes, or until the shrimp turns pink and cooked through.

  7. Serve the Cajun jambalaya hot, garnished with chopped parsley.
