Ingredients

  • 8 oz chicken breast, thinly sliced
  • 8 oz noodles (such as spaghetti or udon)
  • 2 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup snap peas
  • 2 green onions, sliced
  • 1/4 cup chopped peanuts
  • 1/4 cup chopped cilantro
  • 1/4 cup bang bang sauce

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.

  2. In a large pan, heat 1 tbsp of vegetable oil over medium heat. Add chicken slices and cook until browned and cooked through. Remove from pan and set aside.

  3. In the same pan, heat another 1 tbsp of vegetable oil. Add bell pepper, carrot, and snap peas. Cook for 3-4 minutes until vegetables are tender-crisp.

  4. Add cooked noodles, cooked chicken, green onions, chopped peanuts, and cilantro to the pan. Pour in the bang bang sauce and toss everything together until well coated. Cook for an additional 2-3 minutes until heated through.

  5. Serve hot and garnish with extra chopped peanuts and cilantro, if desired.
