How To Make Instant Pot Filipino Adobo Recipe

Savory and tangy Filipino stew that will surely satisfy your taste buds.

Serves:

Ingredients

  • 2 lbs of chicken, cut into serving pieces
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1/2 cup water
  • 1 head of garlic, minced
  • 1 onion, chopped
  • 1 tsp black pepper
  • 2 bay leaves
  • 2 tbsp brown sugar
  • 2 tbsp cooking oil

Instructions

  1. In the Instant Pot, sauté garlic and onion in cooking oil until fragrant.

  2. Add chicken pieces and brown on all sides.

  3. Pour in soy sauce, vinegar, water, black pepper, bay leaves, and brown sugar.

  4. Give it a good stir and close the Instant Pot, making sure it’s correctly sealed.

  5. Set to “Pressure Cook” for 25 minutes.

  6. Once time is up, let the Instant Pot naturally release pressure for 10 minutes, then quick release the remaining pressure.

  7. Open the Instant Pot and give it a good stir. For thicker sauce, set the Instant Pot to “Sauté” and cook for 5 minutes or until desired consistency is reached.

  8. Serve hot with steamed rice.
