How To Make Instant Pot Thai Green Curry

A flavorful Thai dish with juicy chicken and fresh vegetables cooked in creamy green curry sauce.

Ingredients

  • 1 lb boneless chicken breast, cubed
  • 1 can unsweetened coconut milk
  • 1/2 cup green curry paste
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 tbsp vegetable oil
  • Salt to taste

Instructions

  1. Set Instant Pot to sauté mode and add vegetable oil.

  2. Add chicken and sauté for 3-4 minutes until browned.

  3. Add green curry paste, fish sauce and brown sugar. Mix well.

  4. Add sliced onions and peppers. Mix well.

  5. Add the coconut milk and give a quick stir.

  6. Close the lid, seal the valve and set the pressure cook time to 5 minutes.

  7. Once the pressure is released, open the lid and season with salt.

  8. Serve hot with steamed rice.
