How To Make Daddy Eddie’s Roast Pork (Pernil), Puerto Rican-Style

Ingredients
- 4-5 pounds pork shoulder, bone-in
- 8 cloves of garlic
- 2 tablespoons of olive oil
- 2 tablespoons of adobo seasoning
- 2 tablespoons of dried oregano
- 2 tablespoons of ground cumin
- 2 tablespoons of paprika
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 1 cup of orange juice
- 1/4 cup of white vinegar
Instructions

Preheat the oven to 325°F.

In a blender or food processor, combine the garlic cloves, olive oil, adobo seasoning, oregano, cumin, paprika, salt, and black pepper. Blend until it forms a paste.

Place the pork shoulder in a roasting pan and rub the garlic paste all over the pork, making sure to get it into all the crevices.

Pour the orange juice and white vinegar over the pork.

Cover the roasting pan with aluminum foil and roast in the preheated oven for 3-4 hours, or until the pork is tender and pulls apart easily with a fork.

Remove the foil and increase the oven temperature to 450°F. Roast for an additional 15-20 minutes, or until the pork is crispy on the outside.

Remove the pork from the oven and let it rest for 10-15 minutes before slicing and serving.
