Ingredients

  • 8 large eggs
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp turmeric powder
  • 1/4 tsp cayenne pepper
  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.

  2. Add the cumin powder, paprika, turmeric powder, and cayenne pepper to the skillet. Stir well to combine and let the spices toast for a minute or two.

  3. Add the diced tomatoes to the skillet and cook until they soften and release their juices.

  4. Crack the eggs into the skillet, making sure to create wells for each egg. Season with salt and pepper.

  5. Cover the skillet and let the eggs cook until the whites are set but the yolks are still slightly runny, about 5-7 minutes.

  6. Remove from heat and garnish with chopped cilantro.

  7. Serve the spicy Moroccan eggs with a side of crusty bread or warm pita.
