Ingredients

  • 4 large flour tortillas
  • 2 cups of shredded chicken
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of diced tomato
  • 1/2 cup of diced onion
  • 1/4 cup of chopped cilantro
  • 1 tsp of garlic powder
  • Salt and pepper to taste
  • 2 tbsp of vegetable oil

Instructions

  1. Preheat a skillet over medium heat and add the vegetable oil.

  2. Add diced onions and sauté until they are translucent.

  3. Add shredded chicken, garlic powder, salt, and pepper, and cook until chicken is hot.

  4. In a separate skillet, place one flour tortilla. Add a layer of cheese, chicken mixture, diced tomato, and cilantro, then another layer of cheese. Top with another tortilla.

  5. Cook on both sides until the cheese is melted and the tortilla is crispy.

  6. Repeat with remaining tortillas and filling.

  7. Cut the quesadillas into wedges and serve hot.
