How To Make Chi-Chi’s Chicken Enchiladas Recipe
Delicious, cheesy and creamy chicken enchiladas that will have you saying “olé” with each bite.
Serves:
Ingredients
- 1 lb of cooked and shredded chicken breast
- 1 can of enchilada sauce
- 8 corn tortillas
- 1 cup of grated cheddar cheese
- 1/2 cup of sour cream
- 1/4 cup of chopped cilantro
Instructions

Preheat the oven to 350°F.

Pour half of the enchilada sauce in a baking dish.

Soften the tortillas by heating them in a microwave or on a skillet.

Place the shredded chicken down the center of each tortilla.

Add a spoonful of sour cream, a sprinkle of cilantro, and a handful of cheese on top of the chicken.

Roll up the tortillas and place them seam side down in the baking dish.

Pour remaining enchilada sauce on top of enchiladas.

Sprinkle the remaining cheese on top.

Bake for 25-30 minutes, until cheese is melted and bubbly.

Serve hot with additional cilantro and sour cream, if desired.
