Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1 egg
  • 1 cup milk
  • 1 ripe banana, mashed
  • 1/2 cup chopped pecans
  • 1/2 cup caramel sauce
  • Butter or cooking spray for griddle

Instructions

  1. In a medium bowl, whisk together flour, baking powder, salt, and sugar.

  2. In a separate bowl, beat egg and stir in milk and mashed banana.

  3. Add wet ingredients to the dry ingredients and stir just until combined.

  4. Stir in chopped pecans.

  5. Heat a griddle over medium heat and grease with butter or cooking spray.

  6. Pour 1/4 cup of batter onto the griddle for each pancake.

  7. Cook until bubbles form on the edges of the pancake, then flip and cook until golden brown.

  8. Serve with warm caramel sauce.
