Ingredients

  • 4 (6 oz) redfish fillets
  • 1/2 cup unsalted butter, melted
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp salt
  • 2 tsp cayenne pepper
  • Lemon wedges, for serving

Instructions

  1. In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, salt, and cayenne pepper.

  2. Heat a cast-iron skillet over high heat until smoking hot.

  3. Dip each fillet in melted butter, then coat with the spice mixture, pressing it onto both sides.

  4. Place fillets in the skillet and cook for 2-3 minutes per side until blackened and cooked through.

  5. Serve with lemon wedges.
