Ingredients

  • 4 boneless, skinless chicken breasts, cut into thin strips
  • 2 tbsp blackened seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 cup snow peas
  • Salt and pepper, to taste

Instructions

  1. Season chicken strips with blackened seasoning and salt.

  2. Heat olive oil in a large skillet over high heat.

  3. Add chicken to the skillet and cook until blackened on all sides and no longer pink inside.

  4. Remove chicken from the skillet and set aside.

  5. Add peppers, onion, and snow peas to the skillet and stir-fry for 2-3 minutes, until slightly charred and tender.

  6. Return chicken to the skillet and stir-fry for an additional 1-2 minutes, until heated through.

  7. Serve over rice or noodles.
