  • 4 redfish fillets
  • 2 tbsp Cajun seasoning
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 tbsp olive oil
  • Lemon wedges, for serving

Instructions

  1. In a small bowl, combine Cajun seasoning, salt, paprika, cayenne pepper, garlic powder, and onion powder.

  2. Pat the redfish fillets dry with a paper towel, then generously sprinkle both sides with the Cajun seasoning mixture.

  3. Heat a cast iron skillet over high heat and add olive oil. Once hot, carefully place the seasoned redfish fillets in the skillet.

  4. Cook for 4-5 minutes on each side, or until the fish is blackened and cooked through.

  5. Remove from heat and squeeze fresh lemon juice over the fillets.

  6. Serve hot with lemon wedges on the side.
