  • 4 salmon fillets (6 oz each)
  • 2 tbsp blackened seasoning
  • 2 tbsp olive oil
  • 1 ripe avocado, diced
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, seeded and minced
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or oven to high heat.

  2. Rub each salmon fillet with blackened seasoning, ensuring all sides are coated.

  3. Heat olive oil in a large skillet over medium-high heat.

  4. Cook the salmon fillets for 3-4 minutes on each side, or until the fish easily flakes with a fork.

  5. In a bowl, combine diced avocado, mango, red onion, cilantro, jalapeno, lime juice, salt, and pepper. Mix well.

  6. Serve the blackened roast salmon topped with the avocado and mango salsa.
