Ingredients

  • 1.5 kg of beef roast
  • 4 large potatoes, peeled and quartered
  • 4 carrots, peeled and cut into chunks
  • 1 onion, peeled and cut into wedges
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of dried thyme
  • 500 ml of beef broth

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a roasting pan, place the beef roast and season it with salt, pepper, rosemary, and thyme.

  3. Arrange the potatoes, carrots, onion, and garlic around the beef roast.

  4. Drizzle olive oil over the vegetables and season with salt and pepper.

  5. Pour the beef broth into the roasting pan.

  6. Cover the pan with aluminum foil and roast in the preheated oven for 1 hour.

  7. Remove the foil and continue roasting for another 1 hour or until the beef is cooked to your desired doneness.

  8. Remove the roast from the oven and let it rest for 10 minutes before slicing.

  9. Serve the roast with the roasted vegetables and pour the pan juices over the meat and vegetables.
