How To Make Really Useful Roast Chicken Recipe

Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 lemon, sliced
- 1 onion, quartered
Instructions

Preheat the oven to 425°F (220°C).

Rinse the chicken inside and out, then pat it dry with paper towels.

In a small bowl, mix together the salt, black pepper, garlic powder, paprika, dried thyme, and dried rosemary.

Rub the olive oil all over the chicken, then sprinkle the spice mixture evenly over the chicken, inside and out.

Stuff the cavity of the chicken with the lemon slices and onion quarters.

Place the chicken on a roasting pan or a baking dish with a wire rack.

Roast the chicken in the preheated oven for 15 minutes.

Reduce the oven temperature to 375°F (190°C) and continue roasting for about 45 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.

Remove the chicken from the oven and let it rest for 10 minutes before carving.
