Ingredients

  • 1.5 kg leg of pork
  • 2 tbsp olive oil
  • 2 cloves of garlic, minced
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 zucchinis, sliced lengthwise
  • 2 bell peppers, sliced
  • 1 red onion, sliced
  • 2 tbsp balsamic vinegar
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat the barbecue grill to medium-high heat.

  2. In a small bowl, mix together the olive oil, garlic, paprika, dried thyme, salt, and pepper.

  3. Rub the marinade all over the leg of pork, ensuring it is well coated.

  4. Place the leg of pork on the grill and cook for about 1 hour, turning occasionally, until the internal temperature reaches 145°F (63°C).

  5. In the meantime, place the sliced vegetables in a large bowl and drizzle with balsamic vinegar. Toss to coat evenly.

  6. Grill the vegetables for about 10 minutes, or until tender and slightly charred.

  7. Remove the leg of pork from the grill and let it rest for 10 minutes before slicing.

  8. Serve the sliced leg of pork with the grilled vegetables. Garnish with fresh basil leaves.
