  • 1 whole chicken (about 4 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs (such as thyme or rosemary)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Rinse the chicken and pat it dry with paper towels.

  3. Place the chicken on a baking sheet or in a roasting pan.

  4. Rub the olive oil all over the chicken, then season it with salt, black pepper, garlic powder, and dried herbs.

  5. Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) when measured with a meat thermometer.

  6. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
