Ingredients
- 4 chicken breasts, boneless and skinless
- 2 red bell peppers, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- 1/4 cup sliced almonds
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- Salt and black pepper to taste
Instructions

Preheat oven to 425°F (220°C).

In a large baking dish, combine the chicken breasts, red bell peppers, red onion, cherry tomatoes, and sliced almonds.

In a small bowl, whisk together the olive oil, minced garlic, paprika, dried thyme, salt, and black pepper. Pour the mixture over the chicken and vegetables, and toss to coat evenly.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
