Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • 1/2 cup kalamata olives
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the chicken, bell peppers, red onion, cherry tomatoes, olives, garlic, olive oil, oregano, thyme, smoked paprika, salt, and pepper. Toss to coat everything evenly.

  3. Transfer the chicken and vegetable mixture to a baking tray, spreading it out in an even layer.

  4. Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

  5. Garnish with fresh parsley before serving.
