How To Make Curried Chicken & New Potato Traybake

Ingredients
- 4 chicken breasts, boneless and skinless
- 600g new potatoes, halved or quartered
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Preheat oven to 400°F (200°C).

In a large bowl, mix together olive oil, curry powder, turmeric, paprika, minced garlic, salt, and pepper.

Add the chicken, potatoes, bell peppers, and onion to the bowl and toss until well coated in the spice mixture.

Transfer everything to a large baking tray and spread it out in a single layer.

Roast in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the potatoes are crispy and golden.

Garnish with fresh cilantro before serving.
