How To Make Oregano Chicken & Squash Traybake

Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 small yellow squashes, sliced
- 2 small zucchinis, sliced
- 1 red onion, sliced
- 3 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tbsp dried oregano
- Salt and pepper, to taste
Instructions

Preheat the oven to 425°F (220°C).

In a large mixing bowl, combine olive oil, minced garlic, dried oregano, salt, and pepper.

Add the chicken thighs to the bowl and toss until well coated.

In a large baking tray, arrange the chicken thighs, sliced squashes, zucchinis, and red onion.

Drizzle any remaining marinade over the chicken and vegetables.

Season with additional salt and pepper, if desired.

Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the vegetables are tender.
