Ingredients

  • 4 chicken breasts
  • 2 red bell peppers, sliced
  • 2 yellow bell peppers, sliced
  • 1 red onion, sliced
  • 2 tbsp harissa paste
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • 100g feta cheese, crumbled
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. In a small bowl, mix together the harissa paste, olive oil, paprika, cumin, salt, and pepper.

  3. Place the chicken breasts, bell peppers, and red onion on a baking tray.

  4. Pour the harissa mixture over the chicken and vegetables, making sure they are evenly coated.

  5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

  6. Sprinkle the crumbled feta cheese over the traybake and return to the oven for 5 minutes, or until the cheese is slightly melted.

  7. Remove from the oven and garnish with fresh parsley before serving.
