How To Make Harissa Chicken Traybake with Peppers & Feta

Ingredients
- 4 chicken breasts
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 1 red onion, sliced
- 2 tbsp harissa paste
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper, to taste
- 100g feta cheese, crumbled
- Fresh parsley, for garnish
Instructions

Preheat the oven to 200°C (400°F).

In a small bowl, mix together the harissa paste, olive oil, paprika, cumin, salt, and pepper.

Place the chicken breasts, bell peppers, and red onion on a baking tray.

Pour the harissa mixture over the chicken and vegetables, making sure they are evenly coated.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

Sprinkle the crumbled feta cheese over the traybake and return to the oven for 5 minutes, or until the cheese is slightly melted.

Remove from the oven and garnish with fresh parsley before serving.
