How To Make Chicken Pasta Salad

Ingredients
- 8 oz rotini pasta
- 2 cups cooked chicken breast, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup black olives, sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions

Cook the rotini pasta according to package instructions. Drain and set aside to cool.

In a large bowl, combine the cooked chicken, cherry tomatoes, cucumber, red onion, black olives, feta cheese, and parsley.

In a small bowl, whisk together the olive oil, red wine vinegar, garlic, Dijon mustard, salt, and pepper to make the dressing.

Pour the dressing over the chicken and vegetable mixture and toss to combine.

Add the cooked and cooled rotini pasta to the bowl and gently mix until everything is coated in the dressing.
