  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)


  1. Rinse the quinoa under cold water and drain well.

  2. In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.

  3. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 2 minutes until fragrant.

  4. Add the bell pepper, zucchini, cherry tomatoes, oregano, basil, salt, and black pepper. Cook for 5-7 minutes until the vegetables are tender.

  5. Stir in the cooked quinoa and cook for an additional 2 minutes to heat everything through.

  6. Remove from heat and garnish with fresh parsley.

  7. Serve hot and enjoy!
