  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 lemon, juiced and zested
  • 2 tablespoons fresh herbs (such as parsley, basil, or dill), chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Rinse the quinoa under cold water until the water runs clear.

  2. In a saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15-20 minutes until the liquid is absorbed and the quinoa is fluffy.

  3. In a mixing bowl, whisk together the lemon juice, lemon zest, chopped herbs, olive oil, salt, and pepper.

  4. Once the quinoa is cooked, fluff it with a fork and transfer it to the mixing bowl with the lemon herb dressing. Mix well to combine.

  5. Serve the lemon herb quinoa warm or chilled as a side dish or as a base for salads or bowls.
