How To Make Garlic Cheese Quinoa

This garlic cheese quinoa works as a side dish and a complete meal, as the quinoa makes it nicely filling. Garlic & cheese add a great savory quality to it.

Ingredients

  • 3cupswater
  • 1½cupsquinoa
  • 2garlic cloves,minced
  • ½tsponion powder
  • Cooking spray
  • 1cupmilk
  • 2largeeggs
  • ¾cupsharp Cheddar cheese,shredded
  • ¾cupprocessed cheese food,cubed, such as Velveeta®
  • salt and ground black pepper,to taste
  • ¼cuppanko bread crumbs,or to taste

Instructions

  1. Bring water, quinoa, garlic, and onion powder to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer for about 15 minutes or until quinoa is tender and water has been absorbed.

  2. Preheat oven to 350 degrees F (175 degrees C). Prepare a 9×13-inch baking dish with cooking spray.

  3. Whisk milk and eggs together in a large bowl. Stir Cheddar cheese and processed cheese food into quinoa mixture until cheeses begin to melt; season with salt and black pepper.

  4. Mix quinoa mixture into milk mixture. Transfer quinoa-milk mixture to the prepared baking dish; top with panko bread crumbs.

  5. Bake in the preheated oven for 30 to 35 minutes or until topping is lightly browned.
