How To Make Fluffy Lemon Quinoa
Bites of tangy lemon, peppery parsley, and fluffy quinoa makes this light, low-fat lemon quinoa dish the perfect accompaniment to hearty meals!

- 1tspextra-virgin olive oil
- 1cupquinoa
- 1½tbsplemon juice,fresh
- 1cupchicken broth,reduced-sodium
- ÂĽtspsalt
- ½cupflat-leaf parsley,chopped
- 1½tbsplemon juice,fresh
Instructions

In a medium saucepan, heat oil over medium heat. Add the quinoa and cook for 3 to 4 minutes, until lightly toasted.

Stir in chicken broth and salt. Bring to a boil; reduce heat to low, cover, and cook for 15 minutes, or until broth is absorbed and quinoa is tender.

Remove from heat and fluff with a fork. Let cool slightly and stir in parsley and lemon juice. Adjust seasoning to taste.

Serve warm or at room temperature alongside fish or meat, and enjoy!
